In the cooking show program of the 92nd International Alba White Truffle Fair, tastings of Cuneo DOP raw ham and Piedmontese salami IGP

On the weekend at the end of October and until 1 November, from 9.30 to 19.30, at the stand in the Maddalena courtyard, free tastings of Prosciutto Crudo di Cuneo Dop

Prosciutto Crudo di Cuneo Dop and Piedmont Salami IGP are among the protagonists of the great show cooking marathon with the great chefs at the 92nd edition of the International Alba White Truffle Fair, currently taking place in the capital of the Langhe. During the first two weekends of the fair, the two GIs (Geographical Identification) were served as an aperitif at the entrance to the cooking shows, combined with a glass of Alta Langa – the classic Piedmontese method. In the continuation of the program, on the occasion of the extraordinary opening of the Fair from 29 October to 1 November, in the Maddalena courtyard (via Vittorio Emanuele II), a tasting program will take place organized by the Consortium for the Protection and Promotion of Cuneo Crudo at the Carni Dock stand in Lagnasco. The free tasting will take place during the opening hours of the Fair, from 9.30 to 19.30.

“The International Alba White Truffle Fair is an appointment that we consider important for our product – he says Clare Astesana, president of the Consortium for the Protection and Promotion of Cuneo Crudo -. For years now, the Consortium has been participating in this event and in particular in the show cooking program because we believe the public that attends Sala Beppe Fenoglio is particularly selected and interested in the quality products of the area. Not only that, the possibility of meeting and speaking with great chefs is an opportunity that we believe is appropriate for our ham”.

In the kitchen-stage of the Beppe Fenoglio room, during the first two weekends of the Fair, great starred chefs from the area and the world exhibited themselves in a non-competitive competition of who best combines great dishes with the Alba White Truffle. Speakers were Gabriele Boffa of the Locanda Sant’Uffizio Enrico Bartolini restaurant in Cioccaro; Flavio Costa of the 21.9 restaurant in Piobesi d’Alba and Francesco Marchese of the Fre-Rèva restaurant in Monforte d’Alba; Federico Gallo of the Locanda del Pilone in Alba; Pasquale Laera of the Borgo Sant’Anna restaurant in Monforte d’Alba; Ivano Ricchebono of The Cook Restaurant in Genoa and Massimiliano Musso of the Ca’ Vittoria restaurant in Tigliole d’Asti.

“The International Alba White Truffle Fair and, in particular, the sphere of show cooking, represents an opportunity to meet a selected and demanding public which is the target we seek – underlines Daniel Veglio, president of the Piedmont Salami Protection Consortium -. Salame Piemonte PGI obtained recognition from the European Union in 2015 but has not yet achieved the expected notoriety. This is a particularly suitable area to carry out a commercial prospecting activity aimed at the top players in the catering sector”.
